This take on the old classic used basic elements from the classic, but uses zucchini slices instead of pasta. Sounds crazy, but it was delicious.
At first, I had some doubts while making the dish, because I was having and OCD moment and wanted everything to look like the picture and be perfect. Everything turned out great though and tasted just like regular lasagna. Good tips: 1) using ground turkey and part skim cheeses will help cut down on the calories as well 2) baking the zucchini for a few minutes instead of grilling is an easier route.
I hope to make this dish again soon, with thicker zucchini slices, and more cheese :)

I knew reading blogs before I had eaten was a bad idea. This looks absolutely delicious!! Also, I'm really intrigued by the idea of zucchini instead of pasta. I know I'm trying to find ways to not eat as much, and I never think of these clever substitutes. At the same time, I kind of hate zucchini but maybe once its cooked and slathered in everything else I wouldn't mind?
ReplyDeleteI wasn't a big fan of zucchini either. But you can hardly taste it! It really tastes like it's just another vegetable in the lasagna and it's flavor really gets hidden by the rest. I would suggest using thin slices when you make it so you can barely taste it, but trust me, the other flavors will make you forget all about it!
ReplyDeleteThis sounds really interesting! Dumb question though... (because I'm not a big zucchini person either) but does it get soggy after cooked and actually feel like pasta? I am a huge texture eater so I would have to make sure it had a similar texture to pasta or I probably wouldn't be able to handle it haha
ReplyDeleteYes, it has a similar texture to pasta if you cook it a little beforehand. I had no clue it would get that soft! Because we made the slices too thin, it was a little softer than lasagna noodles, but if you cut thicker pieces it should be even more like the texture of noodles.
ReplyDeleteThis looked delicious! I am always pinning recipes on pinterest, but I never actually go through with them, probably because I am lazy and I don't want to go buy new ingredients. But I like that you are following through with the recipes and starring at the picture is just making me hungry. I recently found some pasta salad recipes that looked delicious and not to bad for me either. I'm excited to see what else you cook up, and what you decide to bring to our pinterest party in class!
